Grilled Mackerel with lemon, chilli and crab sauce

INGREDIENTS

• 250g fresh crab meat
• 7 green beans
• 2 medium carrots
• 2 small knobs of butter
• 2 medium sized fresh red chillies
• 1 fresh lemon
• Large tub of single cream
• 1 tsp powdered arrowroot
• 1 tsp powdered paprika
• 2 fresh mackerel fillets
• 1 tsp honey
• 5 cm/2 inches fresh ginger
• 1 large handful chestnut mushrooms
• 5 small new potatoes
• Sprig of fresh parsley, to garnish

METHOD

1. Chop the crab meat and place in a bowl.
2. Prepare the beans and cut the carrots in to julienne batons.
3. Dice the chillies then juice and zest the lemon.
4. In a sauce pan, sauté the chilli in a little butter then add the crab meat and the lemon juice and zest. Heat through then add half of the cream, arrowroot and paprika and bring to a simmer.
5. Place the mackerel on a baking sheet and grill the mackerel fillets for 10 minutes.
6. In a frying pan, sauté the carrots and green beans in butter and honey.
7. For the ginger and mushrooms sauce, peel and dice the ginger and slice the mushrooms.
8. Sauté the ginger in a little oil then add then mushrooms and the remaining cream.
9. Boil the new potatoes for about 7 minutes until cooked.
10. To serve, arrange the mackerel on a plate and top with a little crabmeat sauce and lemon zest. Serve with the ginger and mushroom sauce, honeyed carrots and beans and new potatoes and garnish with parsley.
