Method for filling
1. Add the currants, raisins and sultanas into bowl.
2. Add all the other ingredients, melted butter and brandy.
3. Stir well and leave for a minimum of one week to marinade.
Method for the pastry
1. Rub the 200g of butter into the flour until bread crumb consistency.
2. Add salt.
3. Add sugar, yolks and water and rub together.
Cooking time
Once filled - cook the pies at 180 degrees for 20 mins.
