To the delight of his home crowd in Norwich, the 34-year-old southpaw belied his near veteran status when he produced one of the best shots of his career - a thunderous right hook which floored Melero.
Thaxton came out all guns blazing and landed some good punches in a first round which finished with the Spaniard already cut above the right eye.
The home favourite edged the second too. But it was his right hook in the third which came from nowhere and put a sudden end to a contest apparently set for a much longer haul.
Hailing the best moment of his career so far, Thaxton revealed he was confident - even before the telling punch - he was about to win.
"After the first round, I thought 'I am going to get him'," he told ITV4.
"I am ecstatic and very proud of myself and my team."
Thaxton is looking forward to even better to come too, adding: "Since I was eight years old, I have had an ambition to be world champion. I will fight anyone."
