Serves one 

You will need:
Plain bagel slices half-way across with no butter or low-fat spread and then add a filling of your choice

Salmon
You will need: 25 g (1 oz) smoked salmon, 45 g (3 tablespoons) plain light cream cheese, freshly ground black pepper  and a squeeze of lemon juice to taste.

Spread most of the cream cheese on the bottom half of the bagel, top with the smoked salmon, add some black pepper and then scrape the remaining cream cheese onto the underside of the top half of the bagel. Sandwich together and serve immediately.

Cream cheese
You will need: 45 g (3 tablespoons) plain light cream cheese, 1 ripe sliced tomato, a basil sprig with leaves only.

Fill the bagel with cream cheese like you did with the salmon. Top the bottom half with sliced tomato and tear the basil leaves on top. Sandwich together and serve immediately.

Egg and spring onion
1 hard-boiled chopped egg, 1 heaped teaspoon light mayonnaise, 1 finely chopped spring onion and freshly ground black pepper.

Add the egg to a bowl the mayo and mash it all together with a fork. Add the spring onion and black pepper and mix well. Fill the bagel with the egg mixture and serve immediately.
