Preparation time: 10 minutes
Cooking time: 5 minutes
2 tbsp olive oil
4 heaped tbsp finely chopped pancetta
1 small red onion, finely chopped
4 medium eggs
2 medium potatoes, boiled in their skins, then chopped into small cubes
150g cooked peas
Salt and freshly milled black pepper
Heat the olive oil in a frying pan.
Add the pancetta and cook for 5 minutes.
Next add the onion and cook for further 2 minutes.
Beat the eggs with a little salt and pepper.
Add the potatoes and peas and mix well.
Pour the egg into the frying pan and a cook over a medium heat until set.
Sprinkle with a little cheese and place under a hot grill and finish the top, do not overcook.
