To be a great cook, you need to know how to use the right knife for every job in the kitchen. Phil Vickery demonstrates that, with just three basic knives and some handy tips, you can learn how to slice and dice like a professional.
Small chopping knife - a small kitchen knife used for close, fine work. Used for peeling and chopping vegetables.
Large chopping knife - ranging from 14cm to 18cm. Used for work that requires a more robust knife, for example, chopping up meat or large vegetables.
Carving knife - a knife with a scalloped edge. The air pockets in the scalloped edge allow the knife to glide through the meat. Phil also uses this knife to fillet fish.
