One of the most commonly eaten foods around the world, eggs make up an important part of many people's diets. Eggs of course don't only come from chickens, but also from other birds such as quails, ducks and geese. Egg yolks are a great source of protein, containing so much so that they are in the meat category of the food pyramid. The yolks are high in fat, so are often left out when making healthy or low fat dishes. Due to some health issues, it is essential to use pasteurised eggs, especially when they are going to be used uncooked as they are in mayonnaise.

Eggs are great simply scrambled, used in various baking recipes or hard boiled and added into your fish pie. The most common time of day to eat eggs is of course at breakfast when you can have simple egg soldiers, eggs benedict or a ham omelette. Try incorporating eggs into the rest of your meals as well by using them hard boiled in kedgeree, poached and placed on top of a warm salad or added into some Chinese fried rice.
