Serve up a slice of Dean Edwards' heavenly fruit crumble with crunchy almonds

Ingredients

  • 400 g14 oz bramley apples, peeled, cored and cut into 1 inch pieces
  • 200 g7 oz pears, peeled, cored and cut into 1 inch pieces
  • 20 g¾ oz soft brown sugar
  • ½ tsp ground cinnamon
  • 50 g oz raisins
  • 20 ml¾ fl oz Amaretto

For the crumble:

  • 150 g oz plain flour
  • 100 g oz unsalted butter
  • 50 g oz almonds
  • 50 g oz hazelnuts
  • 90 g oz demerara sugar
  • clotted cream

Method: How to make Apple, pear and almond crumble

1

Soak the raisins in the Amaretto for 10 minutes.

2

Add the butter to a pan, then the apples, pears, sugar and cinnamon. Cook gently for approximately 10 minutes and add the raisins and remaining Amaretto. Transfer to a buttered baking dish.

3

Meanwhile, add the softened butter and flour to a bowl, rub together until the mix resembles breadcrumbs and add the sugar and chopped nuts and mix well. Top the apples with a generous amount of the crumble and bake in a pre-heated oven set at 200C/Gas 6 for 10 minutes.

4

Leave to cool for five minutes before serving with a dollop of clotted cream.
