Swap cherries for plums in this version of the traditional french dessert.
Ingredients
Before you start...
Plums should be halved and the stones removed
- Butter, for greasing
- 4 tsp caster sugar
- 6 plums, halved and stones removed
For the batter:
- 150 ml5¼ fl oz double cream
- 150 ml5¼ fl oz milk
- 1 tsp vanilla extract
- 2 egg, plus 3 yolks
- 125 g4½ oz caster sugar
- 30 g1 oz flour
For serving:
- Icing sugar, for dusting
- Double cream
Method: How to make Baked plum clafoutis
Preheat your oven to 180°C/gas mark 4.
Grease an ovenproof earthenware dish and sprinkle the sugar over it. Arrange the plums in the bottom of the dish.
For the batter, bring the cream, milk and vanilla extract to the boil.
Beat the eggs and egg yolks, then mix in the caster sugar and flour. Gradually beat in the cream mixture.
Pour into the dish and bake for 20 minutes, or until golden.
Dust with icing sugar and serve with double cream.
