Ingredients
- 275 ml9¾ fl oz skimmed milk
- 1 free-range egg
- A pinch of salt
- 1 tbsp vegetable oil
- 55 g2 oz wholewheat flour
- 55 g2 oz buckwheat flour
- Cooking spray
- 80 ml2¾ fl oz fat Greek yogurt
- 200 g7 oz mixed berries

Method: How to make Buckwheat berry pancakes
Place the milk, egg, salt and oil into a large bowl and mix well.
Sift both flours together and add them to the milk mixture gradually, stirring constantly until a smooth batter is formed.
Spray a pan with cooking spray and heat. Pour in an eighth of the mixture and cook for 1-2 minutes on each side, or until golden on each side.
Remove from the pan and place between sheets of baking paper. Keep warm while repeating the process with the remaining mixture to create eight pancakes.
To serve, place a pancake onto a warm plate, add a dollop of Greek yoghurt and mixed berries to each.
