A tasty pizza topped with buffalo meat, mozzarella and tomatoes. Cooked by Dick and James Strawbridge on The Hungry Sailors.
Ingredients
- 2 red onions, sliced
- 2 garlic cloves, sliced
- 300 g10½ oz tomatoes, chopped
- 150 g5¼ oz sun dried tomatoes
- 150 g5¼ oz mozzarella, sliced thick
- 200 g7 oz buffalo fillet steak, seared and thinly sliced (optional)
- 8 large basil leaves
- Salt and pepper, to season
For the dough:
- 600 g21¼ oz strong white flour
- 400 ml14 fl oz tepid water
- 2 sachets fast-acting dry yeast
- 1 tsp white sugar
Method: How to make Buffalo steak pizza
For the sauce:
Gently fry the onions and garlic until soft. Add the fresh and sun dried tomatoes and simmer on a low heat for 30-45 minutes. Blend to form a smooth sauce.
To make the dough:
Sprinkle the yeast and sugar into the tepid water, whisk and set to one side for the yeast to activate.
Sieve the flour into a bowl, make a well in the centre and pour in the yeast mixture.
Knead the dough for 5-10 minutes and shape into a ball. Place into a greased bowl to prove for 60 minutes, until the dough has doubled in size.
Once it has doubled, gently knock the air out by re-kneading the dough. Split the mixture into four equal portions.
Lightly flour your work surface and roll the dough into a circle 5mm thick.
Spoon the sauce over so it covers the dough in an even layer. Lay the mozzarella evenly over the pizza.
Cook in the oven at 200C/Gas 6 for 10-15 minutes, or until crisp.
So the meat stays tender, cook it separately. Rub the meat in olive oil, salt and pepper and sear in a hot pan for a couple of minutes. Remove, let rest and then slice thinly.
Once the pizza is cooked, lay the buffalo slices on top, along with some torn basil leaves. Serve with a green salad.
