This is a high-fibre, quick and easy-to-make snack packed with anti-oxidant beta carotene, magnesium, calcium.
Ingredients
- 1 butternut squash, cubed
- 1 red onion, coarsely chopped
- 1 clove of garlic, finely chopped
- 200 g7 oz feta cheese
- 1 tsp honey
- 1 tsp dried sage

Start by placing the cubed squash into a roasting tin, drizzle with olive oil, and roast in a hot oven (gas 9/200) for around 30 minutes, until soft enough to mash.
Saute the onion and garlic in a little olive oil until the on onion has softened. Stir in the honey and continue to sauté until the onions have become sticky and caramelised.
Place the roasted squash into a bowl, and mash with a fork. Stir in the onion mixture and mix well.
Cut the film pastry into sheets about the size of a piece of A5 paper. Layer three sheets thick. Spread a thin layer f the squash mixture along one edge of the sheet. Crumble a generous helping of feta on top of the squash mix. Then roll the film pastry up, tucking in the edges as you go.
Bake in a medium oven for around 15 minutes, until the pastry is golden brown.
