A sweet and tasty orange dessert with honeycomb and clotted cream. Made by Dick and James Strawbridge on The Hungry Sailors.
Ingredients
- 2 large oranges, peeled and cut into segments, pith removed
- 1 tbsp whiskey
- 25 g1 oz butter
- 25 g1 oz sugar
- 100 ml3½ fl oz clotted cream
- 2 tbsp honey
For the honeycomb toffee:
- 150 g5¼ oz caster sugar
- 50 g1¾ oz honey
- 1 tbsp bicarbonate of soda
Method: How to make Caramelised oranges with honeycomb
For the honeycomb toffee:
Heat the sugar and honey until it gets to the hard-crack stage (149C). Check this using a sugar thermometer, being careful not to touch the bottom of the pan with the thermometer as that will be hotter than the sugar itself.
Remove from the heat and add the bicarbonate of soda. Stir the mixture until it starts to froth. Pour onto a greased baking tray and leave to cool.
For the oranges:
Melt butter in a frying pan and stir in the honey.
Place the segments into the pan, and cook until they are nicely caramelised. Stir in the whiskey.
To serve:
Crush the honeycomb toffee into small pieces and stir into the clotted cream with a splash of whiskey. Serve with the caramelised oranges and further crushed honeycomb.
