Cheese and cider fondue

An easy cheese fondue with mustard and cider. Cooked by Dick and James Strawbridge on The Hungry Sailors.

Ingredients

  • 500 ml17½ fl oz cider
  • 500 g17¾ oz mature British cheddar
  • 1 garlic clove, peeled
  • 1 heaped tbsp cornflour
  • ½ tsp grated nutmeg
  • 1 heaped tsp smooth mustard

Dipping suggestions:

  • Apples, cut into chunks
  • Bread cubes
  • Raw vegetables, cut into chunks (cauliflower, broccoli, mushrooms, celery etc)

Method: How to make Cheese and cider fondue

Rub the garlic around the saucepan; this will add flavour to the fondue.

Pour the cider into a pan and simmer over a gentle heat.

In a small bowl, mix the cornflour with a small amount of cider and whisk to remove the lumps. Add this to the pan and stir.

Grate in the cheese, add the nutmeg and mustard and stir until the fondue thickens.

Lower the heat and keep warm whilst serving.
