Try this delicious chicken wrapped with bacon, a surprisingly healthy dinner option.
Ingredients
- 4 chicken breasts, skin removed
- 4 sun-dried tomatoes
- 4 basil leaves
- A small handful of your favourite herbs, such as oregano, parsley, thyme etc (fresh or dried)
- A pinch of salt and pepper
- 4 slices of back bacon
- 20 cherry tomatoes on the vine
- 6 garlic cloves
- Mixed green salad, to serve
- Baked sweet potato, to serve
Method: How to make Chicken with bacon and sun-dried tomatoes

Preheat the oven to 180C/Gas 4.

Place a sundried tomato, a basil leaf and whatever herb you fancy onto your chicken breast and season well. Wrap with a bacon slice to hold everything in place.

Place onto a baking tray and add the tomatoes and garlic. Scatter a few more of your favourite herbs on top and cook for 20 - 25 minutes or until cooked through. Serve with a mixed green salad and a sweet potato.
