Lisa Faulkner is cooking up a dish perfect for the cold weeks ahead of us - chicken with leek and pancetta potato cake with Cliff’s famous gravy! Yes - Sir Cliff Richard is showing us how to make his extra-special gravy.
Ingredients
- 4 chicken breasts fillets or 2 thighs or legs per person
- 4 large potatoes, boiled or mashed
- 3 -4 leeks, trimmed, washed and sliced
- 100 g3½ oz pancetta cubes
- Few sprigs of thyme
- Butter
- Flour, for coating
- Olive oil
- Salt and pepper
For Cliff's gravy recipe:
- 2 large onions
- 6 stock cubes consisting of 2 chicken, 2 beef and 2 vegetable
- Gravy poweder
- Dash of sweet soy sauce
- Dash of dark soy sauce
- Dash of worcester sauce
- Dash of teriyaki sauce
- Big dash of red wine
- 1 tbsp olive oil
Method: How to make Chicken with leek & pancetta potato
Set oven to 200°C, Gas 6.
Rub chicken breasts with olive oil and season with salt and pepper.
Heat an ovenproof frying pan and put the chicken in, skin side down, to brown for about 5 minutes. Turn over and brown on the other side for 2 minutes then add a couple of sprigs of thyme, transfer the pan to the oven and cook for about 10 -15 minutes, depending on the size of the chicken, or until cooked through.
In a smaller frying pan cook the pancetta for a few minutes. Add leeks and cook until softened. Add the leaves from a few sprigs of thyme and a little olive oil if needed then finish off with a knob of butter.
Mix the pancetta and leeks into the mashed potato and season. Shape into patties and coat in flour.
Heat a frying pan with a little olive oil and cook the patties about 5 minutes on each side until brown and crispy.
Transfer to a plate and slice chicken diagonally in half and put-on top of potato cake.
Serve with Cliff’s gravy!
For Cliff's gravy recipe:
Take 2 large onions, chop finely, and fry in vegetable oil.
Add stock cubes to the onions.
Add gravy powder to the mixture.
Add a dash of sweet soy sauce.
Add a dash of dark soy sauce.
Add a dash of Worcester sauce.
Add a dash of teriyaki sauce.
Add a BIG dash of red wine. Simmer to thicken and blend flavours. Enjoy!
