Chilli squid

A tasty squid dish with chilli, tomato and garlic. Cooked by Dick and James Strawbridge on The Hungry Sailors.

Ingredients

  • 1 lime, zest and juice
  • 100 ml fl oz white wine
  • 300 g10½ oz tomatoes, roughly chopped
  • 2 red chilli, sliced
  • 500 g17¾ oz squid
  • 2 garlic cloves, sliced
  • 2 tbsp coriander, roughly torn
  • 2 tbsp olive oil
  • Salt and black pepper

Method: How to make Chilli squid

Season the squid with salt and black pepper.

Put the chilli and garlic into a bowl with the lime zest. Add the chopped tomatoes.

Finally pour in the lime juice and stir in the coriander.

In a hot pan, stir fry the squid in the olive oil for 1 minute then pour over the tomatoes. Stir together.

Allow to cook for a minute the pour in the white wine. Allow to simmer for 2-3 minutes and serve with a slice of crusty bread.
