Enjoy Aaron Craze's recipe for Chinese-style glazed pork with stir fried broccoli.
Ingredients
- 150 g5¼ oz pork fillet
- 100 g3½ oz broccoli
- 1 /2 red chilli, sliced
- 20 g¾ oz fresh ginger, sliced
- 1 clove of garlic, crushed
- 1 /2 tbsp sesame oil
- A handful of cashew nuts
- A pinch of sesame seeds
- 1 tbsp coriander, chopped
- Vegetable oil, for frying
For the glaze:
- 1 tbsp cinnamon
- 2 star anise
- 2 tbsp soy sauce
- 1 tbsp sugar
- 45 ml1½ fl oz sesame oil
- 1 tbsp honey
- 1 tbsp sugar, dissolved in 50ml of water
Method: How to make Chinese glazed pork with stir fry broccoli
Preheat the oven to 200˚C.
In a bowl, make the sauce by mixing the cinnamon, star anise, soy sauce, sugar, sesame oil, honey and sugared water.
Heat the olive oil in a pan and add the pork to sear all over. Once the pork is coloured on the outside add a tablespoon of boiling water to the sauce to glaze the pork. Remove from the heat and put the pan in a preheated oven for 5-6 minutes.
Meanwhile add the broccoli to a pan of boiling water and cook until tender.
Heat some vegetable and sesame oil in a wok and when hot add the chilli, ginger and garlic, and fry for a few minutes to infuse flavours. Add the broccoli and cashew nuts and toss for 1 minute. Remove from heat.
Remove the pork, allow to rest for 2 minutes then slice. Assemble on a plate and garnish with coriander, sesame seeds and pan juices.
