A creamy mushroom sauce with sherry and thyme. Cooked by Dick Strawbridge on The Hungry Sailors.
Ingredients
- 500 g17¾ oz pasta, cooked as per packet instruction
- 500 g17¾ oz mixed mushrooms, sliced
- 100 ml3½ fl oz sweet sherry
- 200 ml7 fl oz double cream
- 2 garlic cloves, thinly sliced
- 1 tbsp lime juice
- 50 g1¾ oz butter, cubed
- 1 tbsp thyme, chopped
Method: How to make Dick's pasta with mushroom sauce
Fry the mushrooms in olive oil until golden brown.
Add the garlic and half of the thyme and fry gently.
Pour in the sherry, allow the alcohol to burn off then add the cubes of butter. Stir until the butter has melted. Stir in the double cream.
When warmed through, remove from the heat and add a squeeze of lime and the remaining thyme.
Add the cooked pasta to the sauce. Coat with the sauce and serve.
