Garlic chicken with cherry tomatoes, olives and chickpeas. Cooked by Dick and James Strawbridge on The Hungry Sailors.
Ingredients
- 6 chicken breasts, skin on
- 6 garlic cloves, 3 sliced in half lenghtways and 3 thinly sliced
- 24 green olives
- 24 cherry tomatoes
- 1 small bunch of coriander, roughly torn
- 2 lemons, cut into wedges
- 250 g8¾ oz chickpeas
- 250 ml8¾ fl oz white wine
- 2 tbsp olive oil
- Salt and black pepper
Method: How to make Garlic chicken and roasted tomatoes
Push the halved garlic cloves under the skin of the chicken breasts, then place the chicken in an oven-proof dish, skin side up.
Spread the sliced garlic cloves, olives, tomatoes, torn coriander and lemon wedges around and over the breasts. Sprinkle over the chickpeas and pour in the white wine and olive oil. Season with salt and pepper.
Cook in a pre-heated oven at 180C/Gas 4 for 45 minutes or until the chicken is cooked through and the skin is crispy.
