James' gazpacho

A simple and quick Spanish cold soup, ideal for a hot summer day. Made by James Strawbridge on The Hungry Sailors.

Ingredients

  • 2 thick slices of day old bread
  • 50 ml fl oz white wine vinegar
  • 2 tbsp sugar
  • 2 garlic cloves, crushed
  • ½ onion, diced
  • ½ large cucumber, peeled
  • 750 g26½ oz ripe tomatoes, peeled and de-seeded
  • 1 green pepper
  • Salt and pepper
  • 2 tbsp olive oil
  • Fresh basil, for garnish

Method: How to make James' gazpacho

Place the crushed garlic cloves in a bowl with the vinegar and sugar.

Next, tear the bread into small pieces, blend into breadcrumbs and add to the vinegar mixture. Leave to soak for 10 minutes.

Meanwhile, dice the pepper and onion, roughly chop the tomatoes and place in the blender with the cucumber. Add the bread mix and pour over the 2 tablespoons of olive oil.

Blend until smooth, then blend for a further 30 seconds.
