A quick and tasty family meal with lamb meatballs and flavourful couscous - a great recipe from This Morning Healthy Starts
Ingredients
- 175 g6¼ oz whole wheat couscous
- 200 ml7 fl oz vegetable stock
- 50 g1¾ oz sultanas
- 3 tomatoes, chopped
- ¼ cucumber, chopped
- 125 g4½ oz black grapes
- 4 tbsp chopped fresh parsley
- 4 tbsp lemon juice
- 170 g6 oz low fat Greek yoghurt
- 2 tbsp fresh mint
- 300 g10½ oz lean lamb mince
- 4 spring onions
- 1 garlic clove
- 2 tsp curry paste
- 1 tbsp tomato puree
- 3 tbsp chopped coriander

Method: How to make Lamb meatballs with fruity couscous
Place the couscous in a large bowl, pour in the vegetable stock and add the sultanas.
After 5 minutes, fluff up the grains with a fork.
Stir in the tomatoes, cucumber, grapes and parsley.
Combine the meatball ingredients in a bowl and shape into 12 walnut-sized balls.
Preheat the grill to medium-high heat and grill the meatballs for 15 minutes, turning occasionally.
Combine the yoghurt, mint and lemon juice in a bowl.
Serve the couscous with the meatballs with a spoon of the yoghurt mixture on top.
