Celebrate in style with chicken fit for a king and queen

Ingredients

  • 1 kg (approx.) cooked chicken
  • 75 g oz dried apricots, chopped
  • 1 medium onion, finely chopped
  • 2 tbsp tomato purée
  • 1 -2 tsp medium curry powder
  • 25 g1 oz butter
  • 570 ml20 fl oz chicken stock
  • 275 ml fl oz double cream
  • 150 ml fl oz mayonnaise
  • 1 tbsp Greek yoghurt
  • 1 cucumber, to serve

Fry the onion in butter until soft, add the curry powder and cook for one minute.

Add the apricots, tomato purée and stock and bring to the boil. Simmer gently until sauce becomes thick and most of the liquid has evaporated (approximately half an hour).

Leave to cool, then stir in the cream and mayonnaise and season.

Stir the chicken into the sauce.

Serve with sliced cucumber.
