Minty lamb kebabs with spicy tomato salad

Try out these delicious lamb skewers with tomato salad as a part of The Little Black Dress Diet

Ingredients

  • 200 g7 oz fat free Greek yoghurt
  • 1 tsp dried mint
  • 3 tbsp lemon juice
  • 2 garlic cloves, crushed
  • 500 g17¾ oz lean lamb steaks, cut into cubes
  • 2 courgettes, cut into slices
  • 2 red onions, quartered
  • Pinch of black pepper

For the salad:

  • 500 g17¾ oz tomatoes
  • 1 red chilli, seeds removed
  • 1 tbsp chopped parsley
  • Pinch of salt and pepper
  • 4 wholemeal pitta breads, warmed in the oven or toasted lightly

Method: How to make Minty lamb kebabs with spicy tomato salad

Put the yoghurt, mint, lemon juice and garlic into a bowl, stir and then add the lamb. Leave overnight if possible or for a couple of hours at least.

Thread the lamb pieces, courgette slices and onion quarters onto skewers so that you have about 3 lamb pieces per skewer separated by courgette and onion (if using wooden skewers soak them first in water to stop them from breaking). Season and grill for between 7 and 9 minutes, turning occasionally.

To make the salad, simply combine the tomatoes, chilli and parsley in a bowl and season.

Serve the lamb skewers with the heated pittas and tomato salad.
