Mushrooms on toast

A simple tasty dish with sautéed mixed mushrooms and cream. Cooked by Dick and James Strawbridge on The Hungry Sailors.

Ingredients

  • 4 slices thick bread
  • 1 tbsp thyme, finely chopped
  • 2 garlic cloves, finely chopped
  • 300 g10½ oz mixed mushrooms, cut into thin strips
  • 150 ml fl oz double cream
  • 2 tbsp gourmet mushroom infused olive oil, or regular olive oil
  • Salt and pepper, to taste

Method: How to make Mushrooms on toast

Toast the bread.

Heat pan until hot, add the oil and fry the mushrooms until golden.

Add the thyme and garlic. When the garlic has slightly coloured, add the cream.

Season and allow to heat through for a couple minutes before spooning over the toast.
