Mussels with sherry

These appetising mussels are cooked with garlic, parsley and sherry to bring out their delicious flavour.

Ingredients

  • 1 kg4 oz mussels, cleaned
  • 2 tbsp olive oil
  • 1 garlic clove, crushed
  • 2 wine glasses of dry sherry
  • 1 large red chilli, deseeded and finely chopped
  • 4 tbsp flat leaf parsley, roughly chopped

Method: How to make Mussels with sherry

Heat the oil in a large pan, add the garlic and cook for 1 minute.

Add the sherry, chilli and parsley and season well.

Allow to bubble for 30 seconds, then add the mussels, cover with a lid and cook for 3-4 minutes until opened and cooked.

Serve hot on top of garlic bread or cold dressed with olive oil and finely chopped tomatoes.
