Pears poached in plum liqueur

A tasty pear dessert served with cream and meringue. Cooked by Dick and James Strawbridge on The Hungry Sailors.

Ingredients

  • 6 pears, peeled
  • 300 ml10½ fl oz plum liqueur
  • 1 cinnamon stick

To serve:

  • Double cream
  • Meringues

Method: How to make Pears poached in plum liqueur

Peel the pears and stand them up in a pan that only just fits all six of them.

Pour over the plum liqueur and add the cinnamon stick.

Leave to poach gently on a low heat for 30-35 minutes until soft. Take the pears out of the liquor, and discard the cinnamon stick. Reduce until it is thick and syrupy. Remove from heat and allow to cool.

Place a meringue on a plate, put a dollop of whipped cream on it and place the pear on top. Drip the plum/pear liqueur over the pears. Serve.
