Try Phil's super simple royal wedding inspired chilled Rich Tea biscuit cake

Ingredients

  • 225 g8 oz rich tea biscuits
  • 115 g4 oz salted butter
  • 3 rounded tbsp cocoa powder
  • 55 g2 oz caster sugar
  • 2 heaped tbsp golden syrup
  • 115 g4 oz plain chocolate

Method: How to make Phil's Rich Tea biscuit cake

Place the biscuits into a plastic food bag and lightly crush.

Melt the butter in a saucepan, then add the cocoa, sugar and syrup.

Add the crushed biscuits and melted chocolate to the mixture and combine well.

Spoon the mixture into a 20cm cake tin lined with baking parchment.

Leave in the fridge to chill.

Decorate as you wish with melted chocolate or a dusting of icing sugar.
