This pork dish gives us a real taste of Asia - as cooked by Bill Granger on The Alan Titchmarsh Show, every weekday on ITV1 at 3pm.
Ingredients
- 400 g14 oz pork shoulder, cut into strips or pork stir-fry strips
- 3 tbsp green curry paste (shop bought)
- 2 tbsp light-flavoured oil
- 3 green chillies, de-seeded and chopped
- 400 g14 oz green beans, cut into 4cm lengths on the diagonal
- 125 ml4½ fl oz coconut milk
- 3 tbsp fish sauce
- 1 tbsp granulated sugar
- 1 tbsp tinned green peppercorns
- Small handful basil leaves
Method: How to make Pork with peppercorns
Combine the pork with the curry paste. Heat 1 tablespoon of the oil in a large wok or frying pan over high heat. Add the pork and stir-fry for 2 minutes or until just cooked. Remove and set aside.
Return the wok to a high heat and add the remaining oil. Add the chilli and green beans and stir-fry for 2 minutes. Add the coconut milk, fish sauce, sugar and peppercorns and stir to combine. Return the pork to the wok and cook for a further minute or until heated through. Scatter over the basil leaves and serve with steamed rice.
