Prawn and gremolata skewers

A simple and delicious prawn and gremolata canapé, ideal for your next party.

Ingredients

  • 20 peeled king prawns
  • 20 skewers (if using wooden ones, remember to soak them first)

For the gremolata:

  • Zest of 1 unwaxed lemon
  • 1 garlic clove, finely chopped
  • 2 tbsp parsley, finely chopped
  • 1 sun-dried tomato (drained from oil), finely chopped
  • Salt and pepper

Method: How to make Prawn and gremolata skewers

Put the prawns onto individual skewers. Cook on a hot griddle pan for a few minutes on each side until they've turned pink and are cooked through.

Mix together the lemon zest, garlic, parsley and sun-dried tomato in a bowl, season and then sprinkle over the prawns.

Serve as soon as possible, if serving later keep refrigerated until use.
