Quick and easy ratatouille

A quick and tasty veggie recipe that is healthy and so easy to make.

Ingredients

  • 1 red onion
  • 1 clove of garlic
  • 1 red pepper
  • 1 courgette
  • 1x 400 g14 oz can of passata

Method: How to make Quick and easy ratatouille

Finely chop the onion and garlic, and slice the pepper into batons.

Saute the onion, garlic, and red pepper in a little olive oil, until the onion and pepper start to soften.

Cut the courgette into 3mm thick slice, and add to the pan.

Saute for about 1 minute, and then add in the pasata, plus a good pinch of salt and black pepper to taste.

Continue to cook until the pasata has reduced and created a thick ratatouille.
