A tasty bean side dish for any Mexican meal. Cooked by Dick and James Strawbridge on The Hungry Sailors.
Ingredients
- 500 g17¾ oz pinto beans
- 100 ml3½ fl oz red wine
- ½ red onion, diced
- 150 g5¼ oz tomatoes, diced
- 3 tbsp jalapeño, finely chopped
- 1 tbsp paprika
- 1 tsp ground black pepper
- 2 tbsp olive oil
For the topping:
- 150 g5¼ oz cheddar cheese, coarsely grated
- ½ red onion, roughly chopped
- Salt and black pepper, to taste
- 2 tbsp sour cream
Method: How to make Refried beans
Use tinned beans or soak dried beans overnight and the boil for 1 and half hours.
Heat the olive oil in a pan and fry the red onion, tomatoes, jalapeño, paprika and black pepper. Cook until the onions are soft.
Add the beans and the red wine and simmer for 20 minutes.
Remove from the heat and using a potato masher, mash the ingredients together, leaving some texture.
Leave to cool until just warm, not hot. Stir in the cheese, red onion and sour cream.
