An easy and healthy version of sausage casserole served with green beans. Tinned beans are a great staple to have in your kitchen. They are a fantastic alternative carbohydrate source to use in place of potatoes and pastas and work exceptionally well in soups and casseroles, as this casserole shows.
Ingredients
- 8 reduced salt and fat sausages
- 1x 400 g14 oz tin cannellini beans, drained
- 1x 400 g14 oz tin chopped tomatoes
- 2 red onions
- 8 celery stalks
- 1 tbsp olive oil
- 1 head of kale or other dark green cabbage, shredded
- 2 garlic cloves
- 2 L lower salt vegetable stock

Method: How to make Sausage casserole with green beans
Grill the sausages, once browned, set aside to cool a little and then chop into bite-sized pieces.
Heat the oil in a saucepan over a moderate heat, add the prepared vegetables and cook for 1-2 minutes, stirring continuously.
Next add the garlic, tomatoes, sausages and stock. Bring to the boil, then reduce the heat and simmer uncovered for 15 minutes.
Drain and rinse the beans and stir into the casserole. Simmer for a further 5 minutes and serve.
