Try this gluten-free version of a comforting toffee apple and pear crumble.
Ingredients
- 175 g6¼ oz soft brown sugar
- Zest and juice 2 large lemons
- 2 tsp ground allspice
- 2 tsp ground cinnamon
- ½ tsp ground cloves
- 4 ripe pears, peeled, cored and roughly chopped
- 2 Bramley apples, peeled, cored and roughly chopped
- 200 g7 oz brown rice flour
- 100 g3½ oz chestnut flour
- 2 pinches salt
- 150 g5¼ oz unsalted butter, very cold

Pre heat the oven to 200C/gas mark 6.
Place the sugar into a large saucepan and cook until you have a light caramel. Add the lemon juice and zest, allspice, pears, apples, and cook for 5-6 minutes, until the fruit is half cooked.
Place into a 24cm x 3cm deep baking dish.
Place the flours, salt and butter together into a food processor and blitz until smooth.
Pulse in the sugar, do not overwork. Then carefully spoon the crumble mixture over the pears and apples.
Bake for 25-30 minutes, or until well browned and cooked.
Serve warm with custard or ice cream.
