Try this gluten-free version of a comforting toffee apple and pear crumble.

Ingredients

  • 175 g oz soft brown sugar
  • Zest and juice 2 large lemons
  • 2 tsp ground allspice
  • 2 tsp ground cinnamon
  • ½ tsp ground cloves
  • 4 ripe pears, peeled, cored and roughly chopped
  • 2 Bramley apples, peeled, cored and roughly chopped
  • 200 g7 oz brown rice flour
  • 100 g oz chestnut flour
  • 2 pinches salt
  • 150 g oz unsalted butter, very cold

Pre heat the oven to 200C/gas mark 6.

Place the sugar into a large saucepan and cook until you have a light caramel. Add the lemon juice and zest, allspice, pears, apples, and cook for 5-6 minutes, until the fruit is half cooked.

Place into a 24cm x 3cm deep baking dish.

Place the flours, salt and butter together into a food processor and blitz until smooth.

Pulse in the sugar, do not overwork. Then carefully spoon the crumble mixture over the pears and apples.

Bake for 25-30 minutes, or until well browned and cooked.

Serve warm with custard or ice cream.
