Spicy fried chicken wings

You won't believe how quickly you can make these spicy snacks!

Before you start...

Ideally the chicken should be marinated overnight before cooking.

  • 450 g15¾ oz fat, juicy chicken wings
  • 1 garlic clove, grated
  • ½ tsp salt
  • ½ tsp sugar
  • 1 tsp onion salt
  • 1 tsp celery salt
  • 2 tsp mixed dried herbs
  • 1 tsp chilli powder
  • 1 tbsp rice wine vinegar
  • 110 g4 oz self-raising flour
  • 1 L sunflower oil, to fry

For the dipping sauce:

  • 4 tbsp white wine vinegar
  • 1 tbsp sugar
  • ½ tsp ginger, grated finely
  • 1 small red chilli, finely diced
  • ½ garlic clove, finely diced
  • 1 dessert spoon tomato ketchup
  • ¼ cucumber, cut into batons, to serve

Method: How to make Spicy fried chicken wings

Put the chicken wings into a large bowl and mix them with all the ingredients apart from the flour and oil.

Mix them thoroughly (for the best results marinate them overnight).

Take out the chicken wings and place in a plastic bag with the flour and shake thoroughly to coat.

Shake off the excess flour and lay on a tray.

Place in a deep fat fryer at 170˚C until crisp and golden (about 3 minutes). Drain on kitchen paper.

For the dipping sauce:

Boil the vinegar and sugar together. Add the ginger, garlic and chilli. Remove from the heat and stir in the ketchup.

Pass the cucumber batons through the dipping sauce and place in the centre of the plate with the chicken wings on top and the dipping sauce on the side.
