A simple and healthy fish dish with spicy dipping sauce - cooked by Phil Vickery as part of his Continental Cuisine
Ingredients
- 1 medium grey mullet, scaled and gutted and cut into 4 large pieces
- ½ fresh red chilli
- A little fresh basil and coriander
For the dipping sauce:
- 4 tbsp fish sauce
- 2 tbsp soy sauce
- 1 tsp chopped fresh chilli
- 2 tbsp chopped coriander
- 1 tbsp sugar
Method: How to make Steamed grey mullet with simple dipping sauce
Heat a medium saucepan with 300ml water, add a pinch of salt, dash of fish sauce and soy sauce, the chilli and a few herbs. Bring to the boil and simmer, lid on.
Meanwhile, stuff the cavity of the fish with a little basil and coriander, then pop into the simmering pan. The water should be roughly a third up the side of the fish. Cook for 10 minutes gently.
Meanwhile place all the ingredients for the dipping sauce into a bowl and mix well together.
Lift out the fish and serve with the dipping sauce on the side, do not overcook the fish.
