A basic pancake recipe with two yummy sweet fillings - maple apple and bitter chocolate sauce with marshmallows. A lovely recipe from James Tanner, just in time for Pancake Day!
Ingredients
For the basic pancake batter (makes 8 thin crepes):
- 200 g7 oz plain flour
- 2 large eggs
- 600 ml21 fl oz milk
- Pinch of salt
- Knob of butter or vegetable oil, for cooking
For the maple apple, sultana and cinnamon compote:
- 3 large cooking apples, peeled, cored and diced
- 1 vanilla pod, split lengthways and seeds removed
- 50 g1¾ oz butter
- Pinch of sugar
- 100 g3½ oz sultanas
- Pinch of cinnamon
- Splash of water
- Maple syrup and clotted cream, to serve
For the bitter chocolate sauce, mini marshmallows and cream filling:
- 140 g5 oz bitter chocolate buttons (70%)
- 300 ml10½ fl oz whipping cream
- Handful of mini marshmallows
- Vanilla ice cream, to serve
Method: How to make Sweet pancakes
For the basic pancake batter:
Sift the flour and salt into a large bowl and make a well in the centre, crack the eggs and add 3/4 of the milk whisk everything together then add remaining milk, whisk until a smooth thin batter.
Heat small amount of oil or butter in non stick pan then pour off any excess hot fat. Coat the base of the pan with a thin layer of batter and cook for around 40 seconds, flip or turn with a palette knife and cook on the other side. Slide onto a plate and repeat the process and stack up pancakes between sheets of non stick baking paper until required.
For the maple apple, sultana and cinnamon compote:
For the compote, put the apples, vanilla pod, butter, sugar, cinnamon and a splash of water in a saucepan. Cook, stirring often, until the apples turn into a chunky puree. Mix in the sultanas and heat through then remove the vanilla pod. Keep the puree warm and set aside.
Serve the pancakes stacked up with the compote and garnish with clotted cream and a drizzle of maple syrup.
For the bitter chocolate sauce, mini marshmallows and cream filling:
Simply heat the cream in a saucepan on the hob to just simmering, lower the heat and whisk in the chocolate until melted, scoop the ice cream onto the pancakes drizzle over sauce and sprinkle over marshmallows.
