Mike Robinson brings us a lovely T-bone dish that celebrates English beef

Ingredients

  • 1x 800 -900g T-bone
  • 1 tbsp vegetable oil
  • 1 tsp English mustard powder
  • Sea salt and black pepper

Method: How to make T-bone of Sussex beef

Start by liberally sprinkling the meat with salt, pepper and English mustard powder.

Rub the marinade into the meat, then lightly oil a very heavy pan. Bring the pan up to heat so that the air above the pan is shimmering and the oil is smoking lightly.

Drop in the t-bone and cook without moving it around for 90 seconds. Turn the steak over and leave for another 90 seconds.

Transfer the meat to a roasting tray and place in a 200C/Gas 6 oven for 7-8 minutes.

Remove from the oven and allow it to rest on a wooden board for 10 minutes. This should cook the meat to medium rare.

I like to serve a t-bone like this with piles of crunchy, garlicky fried potatoes, and a thin slice of universal butter slowly melting over the top.
