  • 1 tin coconut milk
  • 2 tbsp Thai green curry paste
  • 4 courgettes, sliced
  • 1 large head broccoli, sliced into florets
  • 150 g oz mange tout or snow peas
  • 150 g oz baby sweetcorn
  • 100 g oz cashew nuts, unsalted

Method: How to make Thai green vegetable curry

Pour the coconut milk into a wide pan, stir in the curry paste and bring to a simmer.

Add the courgette and simmer for 5 minutes.

Add the broccoli, mange touts and sliced baby corn and simmer for a further 5 minutes.

Top with roughly chopped cashew nuts before serving.
