Welsh black beef and pepper sandwich

Phil Vickery cooked up this simple but tasty steak sandwich when he island hopped to Anglesey.

Ingredients

  • 2x 225 g8 oz Welsh black rib eye steaks
  • 2 tbsp vegetable oil
  • Salt and pepper
  • 2 roasted red peppers, jarred are fine
  • 8 slices of sourdough bread, cut on the diagonal
  • 1 small bunch of rocket
  • 4 tbsp cranberry relish

Method: How to make Welsh black beef and pepper sandwich

Heat the BBQ or a frying pan.

Rub the oil on both sides of the steak, then season with salt and pepper.

Oil the bars lightly of the BBQ if you are using that cooking method. If not, heat a non-stick frying pan.

Add the steaks and cook until medium rare, about 2-3 minutes on each side, then rest.

Place the peppers into the pan or on the grill and warm through.

Place 4 slices of bread on 4 plates, then top with a little rocket.

Slice the steak and add also, finally spooning on a little relish.

Top with the other slices of bread and cut in half. Serve.
