An easy and delicious winter soup made with seasonal squash. Cooked by Mike Robinson on Countrywise.

Ingredients

  • ½ small crown prince squash
  • ½ butternut squash (full one if small)
  • ½ onion squash
  • 2 medium red onions
  • 2 celery sticks
  • ½ celeriac (optional)
  • 1 tbsp raw horseradish
  • ½ pint stock, vegetable or chicken
  • 1 tbsp good olive oil

Method: How to make Winter warmer soup

Peel and de-seed all the squash then chop into cubes.

Place in a roasting tin with the onion, celery, celeriac and stock and drizzle with olive oil.

You can add the raw horseradish now, or save it to add when blending (this will result in an added kick).

Roast in a low oven (about 120C) for 2 hours. Remove and blend, or cook on the hob on a medium heat until the squash is very soft. Then either eat whole, or blend.

Serve with a bread roll and a sprig of parsley (optional).
