Gino's take on a tasty favourite the whole family will enjoy.
Olive oil for frying
500g beef chuck or shin
2 medium onions, diced
2 tsp tomato paste
500ml beef stock
2 tsp chilli powder
1 lrg tsp dried oregano
1 tsp ground cumin
2 squares of dark chocolate
1 X 400g tine kidney beans, drained
Salt and freshly ground pepper to taste
Grated cheddar cheese
Sliced red chilli
1. Chop up the beef into small pieces
2. Heat a casserole dish with a lid over a medium heat with a little oil and fry the onions, garlic and beef until they are starting to colour
3. Add the spices, tomato paste and stock and bring to a boil. Cover and simmer for approx 3 hours.
Remove the lid and tip in the beans and chocolate and cook for a further 10 minutes then leave to sit for 10 minutes before serving.
4. Serve in bowls topped with the sour cream and cheese with the tortilla chips and rice stirred through with a little bit of coriander and oil on the side
