This avocado dish with black bean salsa tastes great and is healthy as well
2 avocados, halved and stone removed
For the salsa
1 small tin of beans, rinsed and drained (although Gino uses black beans. any will work)
1 small tin of sweetcorn, drained
1/3 red pepper, diced
3 spring onions, diced
A pinch of ground cumin
A pinch of paprika
A few dashes of hot sauce... optional
The juice of a lime
Salt and pepper
2 tbsp finely chopped coriander
Sour cream to serve
1. Heat a griddle pan to medium high heat, brush the cut side of the avocado with oil and season well with salt, place cut side down on the griddle…. leave for 2-3 minutes until dark charred lines have appeared then turn a quarter to make a criss cross shape, leave for another few minutes till its caramelised then remove3 and place on a serving plate.
2. Mix all the salsa ingredients together in a bowl and season, taste and adjust if needed then spoon onto the avocado halves and serve immediately topped with the coriander.
