Smoked salmon tagliatelle with parmesan cream

Ingredients

350g egg taliatelle (good quality)
200g sliced smoked salmon
4 tablespoons torn or finely sliced fresh basil, plus extra to garnish
300ml double cream
6 tablespoons freshly grated Parmesan, plus extra to garnish
(and sea salt and freshly ground black pepper)

Preparation

1. Bring a large pan of water to a rolling boil and add a good pinch of salt. Add the tagliatelle and cook for 10-12 minutes (give it a stir after 3-5 minutes) or according to the packet instructions, until the pasta is al dente.

2. Meanwhile, cut the smoked salmon into long strips and mix with the basil.  Pour cream into a pan and bring to the boil, then boil for 2-3 minutes, stirring occasionally until thickened.  Remove from the heat and stir in the Parmesan, then season with pepper.  The heat of the cream should melt the heat.

3. Drain the pasta and toss with parmesan cream, fork in the smoked salmon and basil mixture until well combined.  Share among warmed pasta bowls and garnish with remaining parmesan and basil to serve.
