Phil Vickery: Warm yourself up with bonfire spiced pork and toffee apples.
Spiced pork and prune patties
- Serves: 4
- Preparation time: 10 minutes
- Cooking time: about 10 minutes
Ingredients
6 ready to eat, stoneless, prunes
450g lean pork mince
2 tbsp chopped fresh sage
¼ tsp ground nutmeg
2 pinches red chilli powder
1 tbsp mayonnaise
1medium egg, lightly beaten
salt and freshly ground black pepper
Method
1. Chop the prunes into small pieces.
2. Mix the prunes with pork mince, sage, nutmeg and chilli powder and mayonnaise and really season well.
3. You can add a little of the beaten egg to bind together.
4. Mould mixture into eight small flat patties.
5. Heat 2 tbsp oil in a large non stick frying pan and cook the patties on each side for about 4-5 minutes.
6. Or mould onto small, soaked kebab skewers.
7. Serve with the bonfire sauce.
Bonfire sauce
- Serves: 4-6 adults
- Preparation time: 10 minutes
- Cooking time: 10 minutes
Ingredients
55g unsalted butter
1 small onion, peeled and finely chopped
1 clove of garlic, peeled and finely chopped
pinch of chilli powder
dash Tabasco sauce
2 tsp vinegar
1 heaped tbsp mango chutney
1 tbsp Worcester sauce
275mls strong beef stock
A little cornflour slaked in cold water
1. Heat the butter in a pan add the onion and garlic together and cook for 2-3 minutes.
2. Add the rest of the ingredients and simmer for 3-4 minutes.
3. Thicken slightly with cornflour and re season, keep warm.
4. Eat warm with the pork patties
5. This will keep in fridge for up to 1 week.
Bonfire toffee apples
- Makes: 8 toffee apples
- Preparation time: 5 minutes
- Cooking time: 15 minutes
8 small dessert apples
350g granulated sugar
Water
1. Place the sugar and water together.
2. Heat the sugar and water until boiling.
3. Cook over a high heat until the sugar starts to turn light brown.
4. Turn off the heat and place the pan bottom into a large bowl of iced water to arrest the cooking.
5. Place the apples onto 8 long sticks, carefully dip into the very hot sugar and coat really well.
6. Place onto cooking silicone and leave to cool.
