Phil Vickery: Try this tasty northern delight, perfect for a bonfire night treat.
This is my mums recipe and I'm assured its very good indeed by my dad.
Lancashire and Yorkshire both have recipes, I'm not telling you which side of the Pennines this came from.
- Makes: 1 x 20cm x 25cm cake approx
- Preparation time: 10 minutes
- Cooking time: 45 minutes approximately
Ingredients
225g plain soft flour
2 pinches salt
1 level tsp ground ginger
1 level tsp mixed spice
225g fine oatmeal
280g black treacle
225g unrefined brown castor sugar
180g unsalted butter
1 level tsp bicarbonate of soda
50mls milk
Method
1. Pre heat the oven to 180° C, Gas 4.
2. Sift the flour, salt, ginger and mixed spice together.
3. Add the oatmeal and stir well.
4. Melt the treacle, sugar and butter together until nice and runny.
5. Dissolve the bicarbonate of in the milk.
6. Pour the melted butter mixture into the dry ingredients and add the milk and bicarb to.
7. Carefully stir together and pour into the prepared baking tray.
8. Cook in the pre heated oven until well risen, and firm about 45 minutes.
9. Cool and cut into large squares.
10. I like to serve this with either cup of strong tea, or warm with syrup custard.
