This sweet delight is bound to get the tastebuds watering!
(Makes 8 to 10 slices)
250g plain flour
2 teaspoons baking powder
125g unsalted butter, softened
250 g caster sugar
4 ripe bananas, mashed
2 eggs, lightly beaten
1 teaspoon vanilla extract
175g good quality dark or milk chocolate chips
1. Preheat the oven to 180c. Sift the flour and baking powder into a large bowl. Mix the butter, sugar, bananas, eggs, vanilla extract and chocolate chips in a separate bowl.
2. Add to the dry ingredients and stir to combine, being careful not to overmix.
3. Pour the batter into a non-stick or lightly greased and floured 19 x 11cm loaf tin and bake for one hour to one hour 15 minutes or until bread is cooked when tested with a skewer.
4. Leave to cool in the tin for five minutes before turning out onto a wire rack to cool. Serve warm with vanilla ice cream or custard.
