1 ripe mango peeled and finely diced
1 red onion finely diced
1 green chilli (optional)
Handful fresh coriander
Juice 1 lime
30ml olive oil
Stuff the cavity of the mackerel with thyme and slices of lime. Mix together all of the marinade ingredients then pour over the fish which has been scored 4-5 times. Leave for 20 minutes. Cook the fish on a BBQ for around 6 minutes per side or until cooked through.
While the mackerel is cooking finely chop the mango, onion, chilli and coriander. Place into a large bowl then add in the oil, lime juice, then season well with salt and pepper.
