Bill Granger shows us how to make a delicious pizza at home - three ways!
For the base:
300g strong white bread flour, plus extra for kneading
1 tsp instant yeast
1 tsp sugar
1 tsp salt
Olive oil, for greasing
For the basic topping:
4 tbsp passata
2 x 125g balls mozzarella, torn
For the fresh toppings:
Grilled baby artichokes, halved
Sliced parma ham
Fresh parmesan shavings
Home-made or deli-bought fresh pesto
A handful of basil leaves
1. Put the flour, yeast, sugar and salt into a bowl, stir to combine. Make a well in the centre then pour in 200ml tepid water and stir to form a soft dough. Tip out onto a lightly floured work surface and knead for 10 minutes. Place in an oiled bowl and cover with a cloth and set aside for 1 hour, or until doubled in size.
2. Preheat oven to 200C. Grease a large oven tray with oil. Punch any air out of the dough. Transfer to the tray and flatten it out with the flat of your hands, pushing the dough into the corners.
3. Spread the passata onto the pizza base with the back of a spoon and scatter with the mozzarella. Drizzle with oil and bake for 12-15 minutes or until cooked though.
4. Take to the table with the separate fresh toppings and let everyone assemble their topping combination.
