Dean has a lovely Summery dish as the sunny warm weather returns for the last full week of the Summer holidays. Its Sunshine on a plate and good for you, with his salmon and sunblush pasta!
4 small salmon fillets
150g cream cheese
50g sunblushed tomatoes finely chopped
1 red onion, peeled and diced
? red chilli, diced Leave in the seeds if you like it spicy
3 garlic cloves crushed
150ml white wine
2 tbsp crème fraiche
80g sunblush tomatoes
Small bunch fresh basil
1. In a bowl mix the cream cheese with the chopped tomatoes, spoon and spread the mixture on top of the salmon fillets then sprinkle on the breadcrumbs, place on a non stick baking tray, roast in a pre heated oven set at 200c / gas mark 6 for around 10-12 minutes.
2. Cook the pasta by bringing a large pan of salted water to the boil and cook according to the packet instructions. Drain.
3. Meanwhile heat some oil then fry the diced red onion, chilli and garlic in a pan for 3-4 minutes until softened. Add the white wine and continue to cook until the liquid has reduced by half, then stir in the crème fraiche, add the tomatoes then stir. Throw in the drained pasta and toss everything together.
4. Garnish with some fresh basil and top with the salmon fillet.
